The restaurant of medieval European cuisine ROLAND is located in Karlovy Vary, 100 m from the Thermal Spa Hotel. There are almost no similar restaurants in the Czech Republic. Medieval cuisine means cooking only from those products that were used in Europe before the 16th century, i.e. before Columbus's voyage to America. The recipes of that time have been preserved. The more detailed of them date back to the late Middle Ages. They contain not only a list of products, but also their proportions, and more detailed methods of preparation. We considered some of them acceptable for the tastes of our contemporaries. Some dishes will definitely surprise you.

For example, Byzantine borscht. This dish allows you to answer the common question in a new way: which country is the birthplace of borscht? This soup came to the territory of modern Crimea together with the Roman legionnaires. The Romans, in turn, borrowed its main ingredients from the Greeks. Byzantine borscht turned out to be tasty and low-calorie.

This is exactly how modern people strive to eat. Different medieval classes had different food options. Our restaurant menu has preserved this diversity: from beans - the food of simple peasants, to game dishes, which only the highest nobility had the right to hunt and consume. But not all nobles had the opportunity to eat venison tenderloin. We also have interesting options for children: instead of the usual French fries - similar to them, but tasty and healthy pieces of baked turnip.

Meat, fish, poultry, vegetable dishes, which were used by people of the medieval era, allow guests of our restaurant to feel the breath of centuries.
